
Stop Waiting on Your Oven to Recover
If you’ve ever run a busy kitchen, you know the frustration of a deck oven that just can’t keep up. You load it up with dough, the temperature plummets, and suddenly you’re standing there staring at the dial, waiting for it to climb back up. It kills your rhythm. We fixed this by adding infrared auxiliary elements to the mix. Forget those old-school resistive coils that take forever to warm up. We use short-wave halogen tubes. Instead of heating the air and hoping that heat eventually reaches your bread, these tubes blast heat directly into the stone and the product. It’s immediate. The secret is in the power. To get an oven back to temp fast, you need a lot of punch in a small space. We use a high-voltage setup to push more power through the quartz envelope. It basically forces the heat flux higher, so your oven hits its set point in a fraction of the time. You aren’t just waiting around; you’re baking. As for the gear itself, we use halogen-filled quartz tubes. This keeps the filament running hot without burning out. If you’re swapping these into an existing setup, we usually use R7s or Sk15 connectors. They’re simple drop-in replacements. You can wire them right in without having to rip apart your chassis or rebuild the oven. The quartz glass is the real hero here. It lets that short-wave radiation pass right through, focusing all that energy on the dough instead of wasting it on the oven walls. Now, a word of caution. This setup can easily double your throughput because your preheat times vanish. But it’s powerful stuff. Because the heat is so intense, you can actually scorch your product if the tubes are mounted too close. You’ll want to spend some time dialing in your timing relays and checking your sensor placement. You don’t want a burnt crust. Also, keep an eye on your cooling fans. These tubes put out a lot of ambient heat around the electrical housing. If your fans aren’t up to the task, you might fry your control board. Get the cooling right, tweak your timers, and you’ve got an oven that actually keeps pace with you.
